The Malecón in Puerto Vallarta is a 12-block, mile-long boardwalk that parallels the sparkling waters and bright beaches of Puerto Vallarta. Eugenia sits up in the top floors of the Grand Miramar Resort & Spa, and the views alone are worth the trip out there. This culinary gem has an established vegan menu already, but it is also on its way to incorporating the Beyond Burger into their menu very soon. So, it is definitely the place to visit as a vegan. We tried the paella and the pumpkin star baby with pibil sauce accompanied with pineapple pure, and it was fantastic. This is the place to go if you are looking for an upscale environment with vegan dishes.
