Vegan Pea Soup

Peas are in season in the springtime making it the ideal time to make a classic pea soup!

Ingredients

3 cups of English peas

1 lb pea shell

3 tbsp EVOO

4 cups water

.2 oz of salt

4 oz of lavender

2 oz of lemon zest

1 coffee spoon of Maldon salt

(Serves 4)

Directions

    • Add the water to the pea shell and lavender. Let them boil for 5 minutes. Strain and keep the broth.
    • Use the broth to cook the fresh peas for 10 minutes.
    • Drop peas and broth into the blender and blend.
    • While the soup is whipping,
      add EVOO
      and salt.
    • Taste now so the flavor is to your liking. Let blend for 2 minutes more.
  • Serve with EVOO,
    Maldon salt, and lemon zest.

Tip 1: Don’t let the pea shells overcook as the soup can get too bitter.

Tip 2: When whipping the soup, the more air you let in the blender, the lighter the texture of the soup should get.
