Vegan Mango Lassi

Ditch your green juice for a day to make this vegan version of a lassi, a popular Indian drink!

 

Ingredients

1/2 cup cashews (soaked for 12 hours and drained)

1/2 cup mango (frozen or fresh)

1 ¬Ω tblsp lemon juice

1 cup water

1/2 tsp cardamom

4 dates

 

Blend until completely smooth. If not using frozen mangos, re-blend a second time with 1¬Ω cups of ice.

 

Makes 2 servings
