  • 1 1/2 cups cooked lentils
  • 1/2 cup mushroom
  • 1 cup tofu (firm)
  • 1 cup rolled oats
  • 3 stalks celery
  • 1/2 white onion
  • 2 cloves garlic
  • 3 tbsp. soy sauce
  • 3 tbsp. ketchup
  • 3 tbsp. parsley (chopped)
  • 1 tsp dried basil, fennel, and thyme

Procedure:

1. Preparation

The first step in making this delicious lentil loaf is to cook the lentils (black or brown). If you want to cut down the prep time, you can also opt for canned lentils. Once the lentils are cooked, you can now preheat your oven to 350 degrees Fahrenheit.

While preheating your oven, you can start chopping the garlic, mushroom, onion, and celery. Afterward, place the ingredients in a saucepan with some water, salt, and pepper. The next step is to allow the ingredients to soften for several minutes using medium heat.

2. Mix

In a large bowl, crumble the firm tofu between your hands until it turns into small chunks. Afterward, you can stir in the sautéed veggies, cooked lentils, oats, and parsley. The next step is to grind the herbs and spices in a mortar and pestle. Afterward, you can add these ingredients to the lentil loaf mixture. Then, you can add the soy sauce and ketchup to help bind the loaf together. You can also add more ketchup and a tbsp. of water into the bowl if the mixture is too crumbly.

3. Baking

After mixing all the ingredients, the next step is to place the mixture into a non-stick loaf pan and bake it for around 50 minutes. Keep in mind that the crust of the loaf should turn brown to ensure that the inside is cooked properly. Once cooked, you can now allow the lentil loaf to cool before slicing and serving.

Cranberry Sauce

Cranberry sauce is a staple for Thanksgiving. As such, you should know at least one recipe for this sauce. The good news is that this delicious cranberry sauce recipe is easy to make, and it only requires four ingredients.

  • Cranberries (fresh or frozen)
  • Orange zest
  • Maple syrup
  • Salt

Procedure:

To make this delicious cranberry sauce recipe, you can mix 1/4 cup of water with the cranberries, orange zest, maple syrup, and salt in a saucepan. Then, allow the mixture to simmer using medium-low heat. Keep in mind that you have to stir the sauce so that it won’t burn. Once the cranberries start to burst, you have to reduce the heat to low and cook the mixture for about 15 to 10 minutes. While simmering, you have to stir the sauce frequently until it thickens.
