2 tablespoon chia seeds
1 coconut milk yogurt plain (I like the brand called SO, it is dairy free)
1 cup coconut milk (plain, unsweetened)
½ cup gluten-free oats (uncooked)
A dash of vanilla bean extract
1 cup of fresh fruit of your choice (berries, bananas, pineapple, ect..)
Mix coconut milk, dairy-free yogurt, chis seeds, oats and vanilla in a bowl and stir thoroughly. Add the yogurt mix to a pretty glass or jar on the bottom about an inch. Add 1 inch of your favorite fruit cut up on top of yogurt mix. On top the fruit, add another layer of the yogurt mix. On top of the second layer of yogurt mix add the rest of the chopped up fruit. Store in fridge for at least 4 hours. Can keep for 2 days in fridge.
