VIVA Vegan Vanilla + Fruit Pudding Cups Recipe

Everyone loves pudding, no matter what time of year. These VIVA Vanilla & Fruit Pudding Cups are easy and to make and sure to please any guest on your list. If you are serving more persons, simply adjust the ingredient amounts proportionately.


1 cup chopped fresh or frozen
fruit (your choice)
1 Tsp. & 1 Tbsp. cornstarch (suggested
Bob’s Red Mill)
2 Tbsp. & ¼cup organic turbinado sugar (cane or raw)
¼ tsp. vanilla extract
1 ¬Ω cups of your favorite vanilla milk replacement
*preferably coconut or soy milk – almond doesn’t thicken as well
Have a few pieces of your fruit choice (depending on the size of the fruit) saved for the top garnish.
*do not chop prematurely, as you should let the pudding chill for at least a couple of hours.

To make Pudding

  1. Combine 2 Tbsp. sugar and 1 Tsp.
    cornstarch in a medium saucepan and whisk in 1/4 cup water
  2. Add your desired chopped fruit, and bring to a boil.

Separately …

  1. Stir the cornstarch and 2 Tbs. water together in a
    small bowl
  2. Transfer mixture to a different medium saucepan, and whisk in the vanilla ‘milk’, ¬¨¬∫cup sugar, and vanilla extract
  3. Bring mixture to a boil over medium heat, whisking constantly
  4. Add the fruit syrup from the previous saucepan to the mixture and continue whisking
  5. Let cook for 2 minutes, or until mixture has thickened
  6. Remove from the stove and let cool for 10 – 15 minutes
  7. Spoon pudding into desired cups
  8. Let cool on the counter until room temperature
  9. Place cups in the refrigerator to chill for a minimum of 1 – 2 hours

To Serve:

  1. Remove cups from the refrigerator
  2. Carefully add your favorite
    fruit pieces to the top of each pudding cup.
  3. Sit back and enjoy!
