Best from July to October, tomatoes are naturally low in sodium, saturated fat, cholesterol, and calories. Not to mention one serving of red, ripe, raw tomatoes is a good source of vitamins A, C, K, folate and potassium as well as two grams of fiber, which is 7% of the daily recommended amount! Perhaps most importantly for summer, tomatoes make your skin look great by protecting it against sun damage! Tomatoes’ lycopene – the carotenoid that makes tomatoes red – also makes skin less sensitive to UV light damage, a leading cause of fine lines and wrinkles.
Try It: Crispy Tomato Chips – Kale chips are old news! Drizzle thinly sliced tomatoes with olive oil, sprinkle with sea salt, garlic powder, fresh chopped parsley and basil. Bake at 200 degrees F for a crispy, delicious snack.
