Summervibes Salad Recipe

In the summer I’m all for a colourful plate of salad. I love mixing up fruit and veggies for my salads, to making it taste a bit different every time. Have you ever tried asparagus, strawberries, and watermelon? It is such a nice combo and nourishes your body just in the right way, as it contains lots of minerals and water for a hot summer day. I call this one my Summervibes Salad.

 

Makes 2 portions

Preparation time: 10 Minutes

Ingredients:

10,5 oz asparagus

4,4 oz rocket

8,8 oz Strawberries

1/2 small cucumber

6 radishes

1/2 small watermelon (2x 0,4 inch slices)

lemon juice

balsamic vinegar

oilve oil

salt

hemp seeds/pumpkin seeds

 

Peel the lower third of the asparagus and cut them lengthways.

Cook in a little water for 7-8 minutes.

When the water evaporates toss the asparagus in it, salt it and put it aside.

Wash the rocket and cut the cucumber and the radishes in small slices.

Cut the watermelon and the strawberries in half. Then sprinkle with lemon juice.

Cut avocado in cubes.

Serve rocket, fruits, and veggies on a plate.

Use some balsamic vinegar and sprinkle the salad. Spread with some oil and hemp seeds.
