This mesmerizing macrobiotic bowl is chock full of color AND nutrients! But do you know what these colors signify?
The ruby red hue of the pomegranate is attributed to the fruit’s anthocyanins, which are flavonoids that boast antioxidant effects. The purple potatoes also glow their gorgeous violet shade due to their high anthocyanin count—the powerhouse pigment has been shown to boost the immune system and protect the heart!
The baby carrots get their bold orange color from beta-carotene, an essential nutrient for vision health, cell growth regulation, and protein production. Beta-carotene, which can be converted to vitamin A, is also the source of the kabocha squash’s beautiful golden flesh.
Arugula, like many leafy greens, contains glucosinolates, which are incredibly detoxifying and team up with folate, flavonoids, and vitamin C to flush out toxins and free radicals.
Now that you know which nutrients give these fruits and veggies their vibrant colors, create this oh-so-yummy rainbow-hued bowl for your next spring or summer cleanse!
- 1 small purple potato (steamed, baked, or boiled)
- 1 cup arugula
- ½ cup kabocha squash
- ½ cup cooked lentils
- ¼ cup baby carrots
- ¼ cup snow peas
- ¼ avocado
- 2 tbsp sliced almonds or sunflower seeds
- 1-2 tbsp pomegranate seeds
- 1 tbsp Philosophie Green Dream Superfood + Protein Blend
- A small handful of sprouts
- A squeeze of lemon or favorite vinegar (optional)
- A pinch of salt
- A pinch of pepper
Cook your veggies ahead of time. Saute, roast, steam, boil, or bake—the method is totally up to you!
Place your greens of choice in the bottom of a bowl. Toss the rest of the ingredients on top or arrange them in sections around the side. Top with sliced avocado and sprinkle with the Green Dream powder. Add a pinch of salt and pepper, a squeeze of lemon, or a favorite vinegar to taste.
