Loco For Cacao Acai Bowl

Spice up your acai bowl with super-food “ice cream treat” from Snow Monkey!  This vegan, paleo, and non-GMO ice cream is perfect alternative to your post workout treat, after school snack, and your new guilty pleasure.

Loaded with fiber, potassium, and antioxidants, each container (16oz) of Snow Monkey contains 20g of protein and is less than 400 calories. Using bananas as the base, Snow Monkey is not only delicious, but it is also full of natural ingredients such as sunflower butter, hemp seed protein powder and cacao.

 

INGREDIENTS:

  • 1 1/2 tsp natural unsalted peanut butter
  • 1 100-g (3.5-oz) pack frozen unsweetened acai berry pulp
  • 1/4 cup Snow Monkey Cacao
  • 1/2 cup frozen strawberries
  • 1/4 cup unsweetened dairy of your choice

TOPPINGS:

  • 1/2 small banana, sliced
  • 1/4 cup granola, optional
  • 2 tsp shredded unsweetened coconut
  • 1 tbsp cocoa nibs
  • 1 1/2 tsp natural unsalted peanut butter
  • Drizzle of raw honey, optional

INSTRUCTIONS:

  1. To a blender, add banana, peanut butter, cocoa powder, acai pulp, strawberries, Snow Monkey Cacao, and a splash of milk.
  2. Start at the lowest speed and work your way to the highest, blend the ingredients until smooth.
  3. Add in ice and turn the blender back up to highest speed. Use your tamper or spoon to push the ingredients into the blades until the mixture is smooth.
  4. Pour acai purée into a bowl, then add toppings.
