Interview with the Owners of America’s First Vegan Butcher Shop, The Herbivorous Butcher
Veganism might be a recent health trend, but for millions of us around the world, it’s a lifestyle. Like we would with any other lifestyle, VIVA GLAM is always on the lookout for new vegan trends, restaurants, and products. Little did we know that we would find the next big thing in Minneapolis, Minnesota: America’s first vegan butcher shop!
While traveling for the “Visiting as Vegan/Vegetarian” column, we visited Minneapolis to meet the owners of this new establishment, The Herbivorous Butcher, in person. Their location is perfect for millennials as it’s just under two miles north of the University of Minnesota and just around the corner from popular pubs and local hangouts. The store itself is just over four months old as they opened on January 23rd of this year, but they’re already operating like seasoned professionals. They’ve already attracted the attention of Diner’s, Drive-Ins, and Dives and filmed their episode just a few weeks ago!
Once inside The Herbivorous Butcher, we met the owners: the adorable and kind brother/sister duo, 34-year-old Aubry Walch and 22-year-old Kale Walch. Luckily they took a break from their busy schedules to tell us about the history of their business, what to find in store, why they became vegan, and their plans to expand! Afterwards, we took a look around the charming shop and sampled as much of the menu as possible. (We highly recommend the turkey, Korean ribs, and all of their cheeses.)
