GARLIC AND CHIVES CAULIFLOWER MASHED POTATOES

Low in carbs and high in nutrients, meet your new favorite side dish…cauliflower mashed potatoes. This is one side dish that's ok to go back for seconds.

 

 

 

 

 

 

 

 

 

 

 

 

Ingredients:

 

1 head of cauliflower
2 tablespoon vegan butter
4 tablespoons vegan sour cream
1/4 teaspoon garlic salt
freshly ground black pepper
snipped chives

 

 

 

Directions:

 

1. Separate the cauliflower into florets and chop the core finely.

 

2. Steam the cauliflower for 12-15 minutes or until very tender on the stove or a steamer.

 

3. Transfer the cauliflower to a mixing bowl and add the butter, sour cream, salt and pepper and mash with a masher until it looks like “mashed potatoes.” Top with chives.

 

 

 

Serves 4-5
