Avocado and Celery Root Salad
Makes 4 servings
Prep time: 20 minutes
- 2 cups grated celery root (grated on the large holes of a box grater)
- 4 teaspoons Dijon mustard
- 1⁄4 cup unsweetened no-ndairy coconut yogurt (such as So Delicious)
- 1⁄4 cup chopped parsley
- 2 avocados
Place the celery root in a colander, lightly salt, and set aside for 10 minutes to allow to soften.
Squeeze the moisture out of the celery root with your hands and transfer to a bowl. Add the mustard, yogurt, and parsley.
Halve and pit the avocados. Fill with the celery root salad.
